Third-generation Julien, Stephanie, and Mathilde craft gorgeous sparkling wine at Champagne Philippe Fourrier in the southern Cotes de Bar region. Produced from 100% Pinot Noir, their 2010 bottling displays fine streams of bubbles and complex notes of dried golden apple, lemon peel, honey, biscuit, toasted walnut, and smoke. This medium-bodied and refined vintage Champagne drinks beautifully now and will complement butter-poached lobster, roasted chicken with truffle sauce, or gruyere cheese fondue. ce 1847.
This is a refreshing yet full-bodied Champagne ideal for special celebrations and food pairings such as grilled lobster, scallops, crab, sushi, veal, and roast chicken. The effervescence is delicate yet persistent, and the bubbles are very fine. The aromatics show hints of honey and poached ripe apricots, beautifully echoed on the round, rich palate. The length is sumptuous and quite complex, yet still shows a refreshing quality and a ready-to-drink liveliness. This is a beautifully constructed, artisanal small batch 2010.
